these yummy breakfast burritos are my go to for meal prepping for my families lunches on busy weeks! these reheat so well and make my life so much easier throughout the week🌯

in my next video i will be assembling the burritos for meal prep so follow and stay tuned! 😋

serves: 12

ingredients:
- 4-5 yellow potatoes
- 1 tablespoon olive oil
- 1-2 teaspoons garlic powder
- 1-2 teaspoons onion powder
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 tablespoon paprika
- 1 lb breakfast meat*
- 1 green bell pepper
- 1/2 onion
- 1 tablespoon minced garlic
- 4 tablespoons butter (separated)
- 12 eggs
- 1/4 c. salsa**
- tortillas for serving

directions:
1. preheat oven to 425f and line a baking sheet with parchment paper
2. wash and cube 4-5 yellow potatoes and toss into a bowl
3. add olive oil and seasoning and then give a good toss
4. spread evenly out on the baking sheet and bake for 20-25 mins
5. while potatoes are roasting brown up your sausage
6. while your sausage is browning dice the bell pepper and onion
7. after sausage is browned remove and place into a bowl
8. add 1 tablespoon of butter into the pan
9. once melted add in the bell pepper and onion over med-med/high heat
10. after that’s been sautéing for a few mins add in minced garlic
11. cook into veggies are soft
12. remove from head and add into the meat
13. at this time the potatoes should be about done
14. set everything to the side and crack a dozen eggs into a bowl
15. whisk, add salt and pepper, then whisk until it’s throughly incorporated
16. add 3 tablespoons of butter into a clean pan over medium heat
17. add in eggs and scramble
18. right before the eggs are done add meat, veggies, cheese, potatoes, and eggs to a large bowl
19. give a good mix
20. add the salsa and mix again
21. add to a tortilla or just enjoy on its own!

notes:
*i used deer sausage but you can use any other breakfast meat you would like
**i use homemade salsa but store bought will work just fine

this sticky, sweet, and savory bourbon chicken is sooo easy and better than takeout!



ingredients:
- [ ] chicken:
- 3-4 lbs chicken thighs
- 1/4 c. soy sauce
- 2 T. garlic powder
- 2 T. onion powder
- 2 t. black pepper
- 1 t. paprika
- 1/2 t. salt
- avocado oil for frying

- [ ] sauce
- 3 T. butter
- dash of sesame oil
- 1 T. garlic powder
- 2 t. ginger powder
- 1/2 c. soy sauce
- 1/4 c. apple juice
- 2-3 T. hoison sauce
- 2-3 T. brown sugar
- 1 t. red pepper
- splash rice vinegar

directions:
1. place chicken thighs in a bowl and add soy sauce, garlic powder, onion powder, black pepper, paprika, and salt. toss until well covered
2. place a pan over medium high heat and cover pan with oil
3. place chicken into pan and cook on each side for 3-4 mins (until you have a 165f internal temp)
4. take chicken out and place on cutting board to cool
5. for the sauce, drain the oil from the pan and then add butter
6. once that’s melted add sesame oil, garlic powder, ground ginger, soy sauce, apple juice, hoison sauce, brown sugar, and red pepper
7. simmer until slightly thickened
8. while sauce is simmering thinly slice chicken
9. once sauce is thickened add the chicken and mix thoroughly
10. serve over rice and enjoy

this fresh and tangy lemonade is the best for any outdoor activities! my favorite way to stay hydrated on hot days🥵🍋

ingredients:
- 1 c. warm water
- 1 c. sugar
- 2 1/2 c. cold water
- 1 c. lemon juice (fresh lemons = 6-7 lemons)
- ice for serving

directions:
1. warm water and add sugar
2. stir to dissolve and pour into pitcher
3. add cold water and lemon juice
4. taste and add to your taste
5. serve over ice

these high protein & naturally gluten free “pancakes” are tiny tummy approved!! these have become a favorite for me and my toddler. high protein and lots of nutrients! 🍌🥞🍽️

ingredients:
- 1 banana
- 2 eggs
- 1 large spoon of peanut butter*
- 1 small spoon of jam**
- butter for cooking
- powdered sugar for topping (optional)

directions:
- place banana, eggs, peanut butter, and jam into mixer and mix until well combined
- heat a pan over medium heat and add a pad of butter
- pour in small pancakes
- cook until set on the bottom, flip and cook for another minute or so until set
- put onto a plate and top with your favorite toppings! (we did maple syrup, blackberries, and powdered sugar)

this creamy and rich homemade ranch only takes minutes to wait and is so worth it!!

ingredients:
- 3 tablespoons butter milk
- 2 tablespoons mayo
- 2 tablespoons sour cream
- 1/4 teaspoon onion powder
- 1/4 teaspoon garlic powder
- 1/4 teaspoon dill
- 1/4 teaspoon black pepper
- pinch of salt

directions:
1. place everything into a bowl and whisk until smooth
2. pour into an air tight container and store in refrigerator overnight for best flavor

dinner so easy a toddler can make it 😁

viral dumpling bake with my toddler🥟🥢

i had the biggest helper at dinner time tonight! this was so yummy and spicy!! 🌶️

ingredients:
- 2 packs of potstickers (i use aldi ones
- 1 can of coconut milk
- 1-3 tablespoons green curry paste*
- 2 tablespoons soy sauce
- 1 tablespoon minced garlic
- 1 tablespoon grated ginger
- 1 teaspoon red pepper flakes
- 1/2 teaspoon sesame oil
- 1 tablespoon sesame seeds
- green onions to top
- chili oil

directions:
1. preheat oven to 375f
2. take a 9x13 pan and dump in the coconut milk, curry paste, soy sauce, garlic, and ginger.
3. mix until well incorporated
4. add in frozen potstickers
5. bake on 375f for 25-30 mins
6. if you want crispy edges broil on low for 2-3 mins (be sure to watch it closely)
7. take out of oven and immediately top with red pepper flakes, sesame oil, sesame seeds, green onions, and chili oil if desired :)

*if you don’t love spicy don’t do more than 1 tablespoon of curry paste. ours was pretty spicy

Fresh spring mix, sweet mandarins, earthy beets, creamy goat cheese, crunchy pecans… and the homemade beet citrus vinaigrette pulls it all together 🍊🥗✨

This salad tastes like spring in a bowl — bright, tangy, sweet, and savory with every bite. The dressing is made with olive oil, white wine vinegar, beet juice, citrus, and a few simple ingredients that make it restaurant level good.

ingredients:
- spring mix
- mandarin oranges (drained but reserve the juice)
- sliced pickled beets* (reserve the juice)
- crumbled goat cheese**
- pecans***
- salt pepper
directions:
1. drain mandarin oranges and reserve the juice for the dressing
2. slice beets and reserve some juice for dressing
3. layer everything into a bowl
4. top with dressing (recipe in comments)
5. lightly toss and serve!

*i result enjoy the aldi beets. they are sweeter than any other pickled beets i’ve had
**you can sub a light summery cheese if you don’t like goat cheese
