I figured I would use this page finally since I’m cooking a lot lately. And maybe Peter will utilize it for his meals too 🤷🏼♀️
Anyhow, made this tonight:
Dude.
This was absolutely the BEST thing I have EVER cooked. It was sooooo fu***ng delicious. Meatloaf with mushroom gravy and creamy garlic mashed. Only thing I would change is lighten up a bit on the garlic in the meat, I went heavy because I love garlic, but it could go slightly less.

Recipe:
2 servings
Scallions
12oz potatoes
10 oz ground beef
1/4 cup panko
1 tsp garlic powder
Green beans
Mushrooms
1oz beef stock concentrate
4 tbsp sour cream
2 tbsp butter
Preheat oven 425
*Potatoes*
Dice potatoes about 1/2 inch cubes
Put in water with some salt and boil, then cook until tender, for 15-20 minutes.
Drain, keeping 1/2 cup water.
Mix in 2 tbsp sour cream, 1 tbsp butter, 1/2 tsp garlic powder.
Mash until smooth, adding left over water as needed to make smoother.
Season with salt and pepper.

Spray baking sheet
Spread green beans out
Lightly sprinkle olive oil across them, and salt and pepper.
Bake in oven for 15 minutes

Combine beef, panko, scallion whites minced, 1/2 tsp garlic powder, 1 tbsp water, season with salt and pepper.
Make into two loaves.
Place on baking sheet and cook 15-20 minutes until cooked thoroughly.
*mushroom sauce*
Trim mushrooms.
Heat drizzle of oil in skillet pan and cook while stirring mushrooms until soft, 2-4 minutes.
Season with salt and pepper.
Add stock concentrate with 1/4 cup of water, bring to boil, then reduce to low simmer. Cool until slightly thickened 3-4 minutes.
Turn off heat.
Add 2 tbsp sour cream and 1 tbsp butter and mix thoroughly until melted. Season with salt and pepper.
