Hi, everyone! It's been a while since I've posted and that's because I started a new journey in March and I haven't been doing a lot of "normal" cooking. I began following a Nutritarian plan in March, and I am thrilled that I have lost 20 pounds, and a lot of my health issues (for example, reflux) have improved or resolved completely!
What is "Nutritarian" you ask? It is a whole food plant-based way of life. The Eat to Live plan was developed by Joel Fuhrman, MD. Dr. Fuhrman coined the term “Nutritarian” to describe a diet that is nutrient-dense and plant-rich, and includes anti-cancer superfoods, which also facilitate weight loss. These foods supply both the right amount of macronutrients (protein, fat and carbohydrates) and the vital micronutrients (vitamins, phytochemicals and minerals) that unleash the body’s incredible power to heal itself and slow the aging process, giving the body renewed vitality. I'm almost at my goal weight, but I have 8 pounds to go. This weekend I hit a new low that I haven't seen in ... I don't honestly remember how long.
Tonight my dinner was a refreshing salad of watermelon, red onion, three varieties of cucumber, and blueberries on top of a bed of mixed greens, topped with homemade blueberry vinaigrette (1/2 c blueberries, 1/4 c raspberry vinegar, 1/2 c water, 1/4 c raw cashews, blended until smooth) with a side of Basil-Crusted Tofu (sans salt) from Clean Food Dirty Girl.
I will share new and tasty recipes with you as I continue to experiment.
