Ube (Oo-beh) or Purple Yam is mostly used for desserts in the Philippines. The flavor is nutty, earthy and slightly sweet. Most cooks or bakers are taking these flavors we knew as treats growing up and putting our take on it. Ube holds a dear place in the heart of filipinos around the world, you can never have enough ube. 🤣

Here are some of my ube creations with our homemade ube jam.

I have been tweaking these Rocky Road Cookies that came up in my head the last couple of weeks ago so I could come up with an extraordinary one! It's loaded with almonds, chunks of dark and semi sweet chocolate chips and stuffed with mallows too!! Did I just say that this is a 3oz cookie? ✌️

I remember most bakeries back home opens at 4:30 in the morning and serve freshly baked breads, others use bicycle with "potpot" to sell warm pandesal. Emong's Malunggay Pandesal in Bocaue will always be on top of my list. I told myself if I will make pandesal it will be almost like that. The size that can fit maling or spam, soft and chewy. I never had a chance to introduce myself. Lol. So here's my awkward selfie and getting to know me while my dough is still proofing 🤗.
I was born in Caloocan and raised in Bulacan. I started cooking early on as a kid in elementary for my family. I would use a step tool to reach the stove because I was so short 🤣. My first thing to cook, of course, was fried rice. Even at this age, I knew my passion was cooking. Fast forward to graduating HS and also getting a Bachelor's degree in Hotel & Restaurant Management. I started my first cooking job at a vegetarian restaurant on Boracay Island. After training there for a year, I transferred to be a personal chef at Amanpulo on Pamalican Island. A few years passed and I find myself working on a cruise line, in a different atmosphere of cooking. With this experience, I moved to Aruba and began my journey at the Ritz-Carlton as a chef in a seafood fine-dining restaurant. I stayed with the Ritz for 4 years in Aruba and transferred to the Atlanta Ritz-Carlton. I met my now husband there, who was working there as a chef as well. After getting married, we have two beautiful children now and I decided to take a step back and focus on raising my children. In my free time, I had a newfound passion for baking, something I didn't have much experience before with. All my experiences was with hot and cold food in restaurants, so it was a change and a little difficult at first. It took me a lot of trial and error. You could find me researching online on how to do this a certain way or how to utilize this certain ingredient. Fast forward again, and the birth of Hapag begins. I wanted to bring the taste of the Philippines to the United States but in Jazzy's way. What we offer are traditional baked goods with a new-age twist utilizing high-quality ingredients. We make our own ube halaya or ube jam from scratch for our ensaymadas and ube brazo cups. This batch took me more or less three hours of stirring until you get the consistency that you want. I also make sure that it's not overly sweet so you can taste the ube (purple yam) that's a little earthy and nutty.
If you wanna taste our ube jam, come see us THIS COMING SUNDAY, 9th of October, with from 12nn til 4pm or until sold out! See you there!!

I remember my mom used to bring us "pasalubong" from Ongpin, Manila (city's Chinatown) some Mahu (Pork Floss) and Bak Kwa (Pork Jerky), and we munch it just like that or put it in porridge, maybe because we also have Chinese blood.
