True ube is labor, patience, and respect for the ingredient. Hard to find, and even harder to make properly. Each batch is stirred for over an hour until the texture is exactly right. Every ube filling I use, from mochi brownies to ube buns to ensaymadas to cookies, is housemade from scratch, with love in every batch.
