When my first daughter, Mya, was diagnosed with a severe wheat allergy, we decided to go totally gluten free and wheat free for ease of shopping and general health. Mya was very limited in her dessert choices and my homemade gluten and wheat-free cake became her “special treat”. Mya has a passion for sharing her “special treats” with her friends and wanted to share them with the whole world. Th
is lead to our bakery which we named "A Special Treat Bakery". Frankie, her brother, also has allergies to dairy and nuts and he has joined us in eating gluten free. In October 2011 we added Zoey to our family. Zoey is our special needs baby and has a syndrome called 2q23.1 microdeletion syndrome. She also eats gluten and dairy free to prevent lymphoid nodular tissue from growing in her colon and to prevent constipation and help her reflux as well as to prevent autistic symptoms are part of her syndrome. That is why originally we named our bakery "A special treat bakery". But since then we have been asked to make other food items for special dietary restrictions beyond gluten, dairy, and peanut free. We have had the privilege of providing cake for a special friend with PKU and we are working on a cake for a little guy with disaccharidase deficiency. Having Zoey, our special needs baby, and working with special dietary needs beyond gluten intolerance and food allergies prompted our name change to "A Special Needs Bakery". Jeanne Munson Adams, Jennifer Rollins Riggs, Amy Perez Shepperd (if the brand of Xantham gum is any other brand than Now Foods, then use 2 tsp.) If you want harder cookies, bake them for 11 minutes.
I experimented today. I really wanted to make a soft gooey cookie. Sharing a recipe that I created today. "Soft Batch" Cookies. Gluten, wheat, dairy, and nut free.
Ingredients:
2 1/4 cup gluten free flour blend (see below)
2 tsp of Bob's Red Mill Xanthan Gum or 1 tsp of Now Food Xanthan gum
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
3/4 cup coconut oil, soft but not liquid
3/4 cup packed brown sugar
1/2 cup granulated sugar
2 large eggs
2 tsp vanilla extract
10 oz bag of Enjoy Life Chocolate Chips
Heat oven to 350 F. Whisk together flour, Xanthan gum, baking soda, baking powder, and salt. Cream coconut oil and sugar. Add eggs and mix until combined. Add vanilla and mix. Add flour mixture and blend. Mix in chocolate chips. Using a cookie scoop, make balls and place about 2 inches apart on cookie sheets. Flatten with your palm or a cup.
Bake 8-10 minutes (8 minutes gooey center). Enjoy!
Gluten free flour blend: 4 cups rice flour, 1 1/3 cup potato starch, 2/3 cup tapioca flour

How about this for some life-changing information?
Here's a tip: If you have a favorite cake recipe it's easy to make it dairy and gluten free.
1. Substitute gluten free flour blend for the flour and add 1/2 tsp xanthan gum per cup of flour. Gluten free flour blend: 4 cups brown rice flour, 1 1/3 cup potato starch, 2/3 cup tapioca flour.
2. Substitute lite canned coconut milk for the "milk". Use coconut oil (superior taste) for the butter or a vegan margarine (sometimes gives things an off taste).
It's that easy. Really. Going egg free is harder.
So...I've been asked by my sister to come out of hiatus to make an incredible hulk/other comic hero cake. Should be done this Friday. I'll post pics. I think I will turn this page into a "how to" page for anyone who wants to make cakes. I won't share my secret recipes but I will share my decorating tips.
It's with a lighter work load but a heavy heart that I announce a long hiatus for A Special Needs Bakery. It's taking a lot of time to deal with my special needs daughter as well as my two special, but quite typical older kids. Cake making and decorating will resume in they year 2024 with the help from oldest daughter who will then be 16 and my middle son who will then be 13. If you have a cake order this month, don't worry, I will still finish it for you. ;)

So...now I'm wired because I'm working on my kids birthday cakes for their party tomorrow. I can't finish them tonight because I promised they could help a bit more. It's hard to give up the control over the cakes. Some of the fondant is a bit wobbly and it's driving me crazy! But my kids will think these cakes are extra "special" because they were allowed to help. I'll post pics tomorrow.

All cakes and baked goods are now 100% gluten, dairy, peanut, and treenut free. They have always been gluten, dairy, and peanut free but now with changing to Authentic Foods Brown Rice flour I can guarantee they are treenut free too!
I finally made the switch to Authentic Foods Superfine Brown Rice flour and I will never go back! The texture is amazing!

There are two gluten free items in our house that we call "donuts in disguise": cinnamon toast (I like at least 1 teaspoon of sugar on mine) and muffins (each muffin has two tablespoons of sugar). Do you have any "donuts in disguise"?
You know you are a mom or dad of child with food allergies when... your nightmare consists of realizing you made a mistake and bought wheat bread and already put it in your gluten free designated toaster slot!
