It’s giving ~thanks~
My dad’s birthday wish every year is for an apple pie. After making them for the last five years from scratch, I’ve got the best recipe nailed down!
Here she is:
- 2 of my all butter pie crusts
- 1200g (about 8 large) Granny Smith apples, peeled, cored and sliced 1/4 inch thick
- 50g granulated sugar
- 50g brown sugar
- 31g all-purpose flour (fluffed before)
- 15ml fresh lemon juice
- 1 & 3/4 tsp ground cinnamon
- 1/2 tsp ground nutmeg
- 1/4 tsp ground cloves
egg wash: 1 large egg beaten with 1 Tablespoon (15ml) milk
- coarse sugar for sprinkling on crust
• Combine apple slices, lemon juice, sugars, flour, cinnamon, cloves, and nutmeg together in a bowl until combined.
•Pour the filling into a large dutch oven over medium-low heat. Stir for about 5 minutes until the apples begin to soften. Remove from heat and set aside.
• Preheat oven to 400*
• Roll out one of the chilled pie doughs on a floured surface, turning it as you go to make a flat circle.
• Make sure there’s enough flour on top of the dough and fold in half and in half again (lightly)
• Place into a 9-inch pie dish that’s at least 1 1/2 in deep.
• Push the dough down into the corner of the dish with your knuckle.
• Spoon the filling into the crust. • Roll out the other dough and use to make a lattice on top of the pie however you like.
• Use a paring knife or kitchen shears to trim off excess dough about 1/4 inch out from the edge of the pie dish and fold over to create a lip.
• Crimp or flute the pie crust edges to seal.
• Brush the top of the pie crust with the egg wash. Sprinkle the top with coarse sugar.
• Place the on a baking sheet and bake for 25 minutes. Reduce temp to 375* and tent tin foil over the top to keep the pie from getting too brown. Continue to bake for 35-40 min until the filling is bubbling around the edges, 35–40 more minutes.
• Remove and cool
**I like to make the day before and put in the fridge. Then, about 30 minutes before you’re going to eat (when you start eating Thanksgiving dinner 😝) put it in the oven at 350* to warm it up completely).
