Start your morning right with these banana-pecan Greek yogurt muffins!
2 Cup All Purpose Flour (I used whole wheat)
1/2 Cup granulated sugar
1/4 Light Brown Sugar
1 teaspoon Salt
1 teaspoon Baking Soda
1 cup chopped Pecans
3 very ripened bananas
2 Eggs
2/3 cup Greek yogurt
1/4 Canola Oil (you can use vegetable oil)
1 Tablespoon Vanilla Extract
Mix dry ingredients, in a separate bowl mix the wet ingredients. Incorporate the dry mixture into the wet mixture. Add the Pecans. Add a streusel if you desire. That recipe is in one of my videos.
Fill the muffin tins, I used the jumbo muffin pan. Bake on 350 degrees for 20-25 minutes.
