It was felixs 11th birthday. He made sure I had to represent his favorite football team! This is my second attempt at a ice cream cake, which came out amazing. It has a layer of chocolate cake with a layer of hot fudge, that I covered with a Oreo cookie crumble and topped with cookies and cream ice cream. I covered it in a Swiss meringue frosting.

FYI my kids are my biggest critics and every single plate was cleaned.

So as most of you know. I am a military spouse in which my husband is currently deployed. I’ve been trying to keep the kids busy, so they aren’t distracted with dad being away.
