Soooooo…I’m always trying something new. On the weekends Mr. Sprinkles never really knows what he will find when he rolls out of bed.

I’ve been obsessed with the soufflé pancakes since we had them for brunch. We actually went two days in a row. The second day was for “research”.

As always, I’m like “how hard can it be?” 😳 The answer? Very.Hard. These will take some additional kitchen gadgets. I need a new griddle, stainless dome lid for steaming and a thermal thermometer. We both felt like the flavor profile was there but they weren’t quite right I think the additional steam and correct temperature will give me the fluff that I felt like it was lacking.

To make this extreme yumminess I had to make meringue for the first time ever which currently has me down the meringue rabbit hole so stay tuned for that 🤦🏻‍♀️

I’m not sure why I always think I need to bake myself a cake when I am making cakes for an order. This one went to a birthday party. Mine doesn’t get as much attention but still has all the flavor.
