Ube-licious! 💜 This dreamy, light ube coconut cake is inspired by my recent trip to Oahu - where ube’s on everything! That vibrant purple? Yep, straight from the ube itself.

Wondering what ube is and what it tastes like? Ube is a purple yam native to the Philippines. As for the flavor (in cake form), it’s earthy, nutty, with a hint of vanilla. But honestly… you’ve just got to try it for yourself!
