This past week's bake. Special was kalamata olive and rosemary 🫒yum!!

Baguettes are a work in progress. The most challenging thing has been creating a steamy environment which is almost impossible without a vessel in a gas oven. I've rigged a system using stainless steel bus pans. I'd love to be able to bake more than 2-3 at a time though! I've got more plans up my sleeve... Watch this space! These baguettes came out AWESOME!

Here are some in progress and finished loaves from this week's bake. The Jalapeno Cheddar loaves were a huge hit. Thanks to Gary Gargan for making some pickled jalapenos as we couldn't find any at the stores, and I think that's what made the loaves so special!

I'm super excited to be test baking some sourdough baguettes 🥖. I've made them before, but it's been a while. Now that I've been baking for about 10 years, I think shaping will come easier and the process doesn't seem so intimidating.

When the Dexcom wakes you up at 4:15, you get right to it!

As Tristan said, all ears! I think the dough may have either been slightly under proofed, or more possibly I scored too deep, all the other loaves seemed ok 🤣. You can see one round loaf (for us at home) was a bit smaller than the others as it was an experimental bake in a small aluminum pot. A lot of sourdough involves experimenting!

I'm pushing fermentation a little bit. I saw a reel recently that showed beautiful, fluffy, jiggly dough and that is what I'm shooting for. Now I have to be careful as over fermentation can happen very quickly as we transition through spring. Then in summer I will have to use cold water, compared to the 80° I'm using now.

Sabi made some organic candied orange peels this week. We'll be testing out some sourdough scones with them this weekend...
