We’re still actively working through adjustments to our milling blends, production process, and staff training as we rebuild and expand behind the scenes, so bear with us as we continue dialing everything back in.

When we found a few months ago, they were operating as a small stone mill. That kind of setup cannot produce high performance bagel flour, nor at scale. But when we asked if they ever would, it just so happened they were already in the process of expanding, re outfitting, and bringing in the commercial milling equipment needed to do exactly that. We shared our milling specs to produce our proprietary blend, and they got to work.

Without them, this wouldn’t be possible.

Their new milling operations and full product line officially launch tomorrow, and we are incredibly proud to be producing and crafting with their flour.

For those carrying the burden of working within the limits of what’s commercially available and how it’s been processed to mask the defects of bad crops while stripping away both flavor and function—

There’s a new Queen in milling taking reign.

Tomorrow, May 5th, they launch their new operations and expanded commercial line of flours.
