Have you ever promised to bring something to a party, then when the time comes you’re tired or busy and just don’t feel like baking from scratch? That was me a few years ago. I ended up making these Andes mint brownies, and I guess you could say that my laziness paid off because I’ve made them every Christmas since. They’re fudgy, chocolatey, and the crunchy mint topping takes them to the next level of delicious. They’re super simple to make too. Wanna know why? Because I use a boxed, yes, boxed brownie mix. There’s no shame in my baking game. 😀 And let me tell ya, brownie mix is really good. They taste just like homemade.
Here’s what you do...
Make the brownie mix as instructed. Immediately after baking, lay the Andes mints on top, let them melt slightly, then use a flat spatula to spread the chocolate evenly. Let cool until the chocolate is set, then have at it. You won’t be able to stop eating them so be sure to have your loose pants on!
