Have you ever promised to bring something to a party, then when the time comes you’re tired or busy and just don’t feel like baking from scratch? That was me a few years ago. I ended up making these Andes mint brownies, and I guess you could say that my laziness paid off because I’ve made them every Christmas since. They’re fudgy, chocolatey, and the crunchy mint topping takes them to the next level of delicious. They’re super simple to make too. Wanna know why? Because I use a boxed, yes, boxed brownie mix. There’s no shame in my baking game. 😀 And let me tell ya, brownie mix is really good. They taste just like homemade.

Here’s what you do...
Make the brownie mix as instructed. Immediately after baking, lay the Andes mints on top, let them melt slightly, then use a flat spatula to spread the chocolate evenly. Let cool until the chocolate is set, then have at it. You won’t be able to stop eating them so be sure to have your loose pants on!

A few weekends ago I spent two days baking Christmas cookies with my mom. It’s a tradition we started four years ago. We baked a TON of cookies, so I knew I’d have a lot of options to celebrate National Cookie Day and for the hosted by the lovely Helen () and Laura ().

After spending a day “professionally” photographing the cookies, I decided not to use any of them. Instead, I chose this one. I took this picture after we had finished decorating. It’s not styled or shot with a fancy camera lens in the perfect light. There’s even a misshapen snowflake! ❄️ What this photo does have is the wonderful memory of cutting shapes out of the dough and decorating these sugar cookies with my mom. The recipe itself holds a special place in my heart (and tummy 😊) because it’s one she’s baked for me and my siblings since we were kids. These types of memories are what this time of year is all about. Let’s remember to cherish them, especially during a year that has been tough on all of us. It’s so important to find joy in the little things. 💕🍪

If you can’t tell, I’m on a cranberry kick right now. I love their festive color and the great flavor they bring to baked goods, like these cranberry pie bars. They’re buttery, tart and delicious! They came together pretty easily too. I would’ve liked more of a crumble texture on top, but I’m dealing with a bum shoulder and I didn’t have the strength to cut the pastry dough by hand as much as I wanted. (I’m hoping I’ve been nice enough this year so that Santa will bring me a food processor. 😇🎅🏻🎁) Other than that, these were a tasty treat and great way to use up leftover cranberries.

I’ve been enjoying these cranberry walnut muffins for breakfast every morning. The recipe is from . You can find the link to it in my bio. I omitted the orange zest and juice since I’m not a huge fan of cranberry-orange, and added 1 cup of crushed walnuts instead. For the yogurt, I used 0% vanilla skyr to make them a little bit more healthy, or at least I like to think that! 😁

With Thanksgiving just a few weeks away, I’m sure pie is on the top of everyone’s baking list. I’ve never been a huge fan, but after making this pumpkin pie for my husband I’m slowly coming around. Mainly because of the buttery, flaky crust. 🤤 For those of you who are pie fans, I’d love to know some of your favorite flavors/recipes. 📝🥧🦃
