I haven't had occasion to bake a sourdough artisan loaf in a while because I've been focusing on expanding my skills with other baked goods.

I forgot how much I like the process 😊

Before and after.

My technique is ever-evolving. This time I did the second half of the bake (when you take the lid off) at a slightly lower temp and I added 5 minutes to the baking time. The inside was soft with an internal temp of 205, and the outside was brown and crispy but not burnt.

I also cut the control channel deeper than I usually do.
