We had fifth Sunday dinner after church this past Sunday. I took my lemon blueberry pound cake for a dessert and this is all that was left. This seems to be a favorite, I get lots of compliments on it and am asked often to make one for others.

A good friend of ours gave us a bag of zucchini. I’ve never really cooked zucchini so I wasn’t sure what to do with it, so here you go. First off, I made some zucchini bread. I let it bake a little to long so it’s a little dry, but next time I won’t bake it as long, but it was good. Then tonight I made a Crispy Baked Parmesan Zucchini strips. They must have been good because there wasn’t any left. 😋

I’ve been back in the kitchen this week and it’s felt so good to be there. It’s funny, because all my orders this week have been for pound cakes, but that’s okay. I love baking pound cakes. It reminds me of home. Growing up, Mama and Daddy’s house always smelled like fresh pound cake right out the oven and a pot of fresh brewed coffee. My Aunts also always had some kind of homemade desserts waiting for any company to stop by and visit awhile. The memories makes me smile and my heart happy! 😊❤️

I was so excited to start my baking again since the holidays, but I guess now I will have to wait another week. Yesterday afternoon I sliced my thumb open and now have stitches in it, so I guess my new recipes will have to wait until I get my stitches out. 😢 In the meantime, do you have any suggestions you would like to see on the menu and I’ll check them out this week.

I made a no bake blueberry cheesecake Tuesday and Billy took it to the men’s meeting that night. It must have been good because there was only a small slice left. This is something I want to branch out on as well as making truffles. Any suggestions?
