- Sourdough starter naturally contains prebiotic and probiotic bacteria. While the probiotics are destroyed by the heat in baking, the prebiotics remain. These nutrients supports a healthy gut.
- Sourdough starter creates a culture of wild yeast which produces lactic acid. This is wait creates that distinct sour flavor.
