Everybody wants to be a baker until it’s 2 a.m., the mixer is screaming, and you’re still chasing perfection.

While others are busy talking about what they’re gonna do, I’m pulling cheesecakes out of the oven and putting smiles on faces.

No shortcuts. No gimmicks. No fake hype.

Just real ingredients, late nights, hard work, and cheesecakes that hit harder than they have any right to.

The crown wasn’t handed to me.

I earned it one cheesecake at a time.

From the Arizona heat… through the neon chaos of Vegas… dodging Reno weirdness… soaking in the beauty of Shasta… and finally rolling back home to Grants Pass.

A lot of miles. A lot of gas station coffee. A lot of bad road food decisions.

But there’s something about seeing that Southern Oregon sign and knowing you made it home.

Now it’s back to the kitchen, back to the cheesecakes, and back to raising a little hell in Grants Pass.

The Bearded Baker has officially returned from the outlaw dessert tour of the west.

“No kings.”

Perfect. Because around here I didn’t appoint myself anything — the people standing in line did.

You can scream “no kings” all you want while eating dry-ass cheesecake made from a Pinterest recipe and a prayer. I’ll just keep over here making the stuff people actually remember.
