So here’s last nights blow your socks of dinner. First one is seared salmon, that I soaked in lemon milk to bind with the proteins in the fish to take the fishy taste and fishy odor away. I then topped it with various spices, and a teriyaki butter reduction sauce. Served with caramelized lemons and oranges to enhance the flavor and again reduce the fishy taste and odor. (I was cooking for a potluck, and my main supervisor said she’d never had a salmon that didn’t taste fishy or smell fishy and that she just doesn’t like or will ever eat it. So I took that as a challenge lol, long story short she loves salmon now but only the way I made it lol. I also topped the salmon with a spoonful of caramelized onions/garlic mixture and 3-4 thinly sliced avocado to add a degree of freshness to it all lol.
And the second dish is chicken thighs, that I deboned, I then spiced them with slap your mama, lemon pepper, onion powder, garlic salt, cracked black pepper, and Himalayan pink sea salt. I placed those skin side down in a roaringly hot skillet with just a dash of oil to get the skin crisp. Seared them on both sides for about 3-4 minutes till they were just slightly a golden brown color, and then removed them from the pan, finished them up in the air fryer. And served them with a topping of fresh basil and parsley, and whipped together a garlic/lemon pepper aioli sauce to dip it in.
