Lots of bread this morning! (Sat. 9/30) Pumpkin bread, raspberry/white chocolate, lemon/blueberry, banana, babka(apple, chocolate and raspberry, hard rolls, cinnamon rolls and lots of breads. Open till noon today.

This the pre shape for the classics sourdough. They will rise for a bit and then into the oven for our opening at 9 am. It is an important step in the bread making process.

Still have sandwich loaf, rustic, a bunch of classics, cranberry walnut baguettes, regular baguettes, garlic cheese baguettes, bread bowls, and an assortment of individual cinnamon rolls and four 1/2 dozens.

It was a great trip, Atlantic City is well... interesting. The Expo was really great, I learned a lot and some of it will be heading your way. I got a recipe for a Brioche Bread and Rolls, a new cinnamon bun that looks amazing, was introduce to making doughnuts, and so much more.
It was great to be in sessions with food network bakers, people that have written multiple books on bread and to talk with other bakery people and learn from them.
There was a interesting session that looked at bread and it's transformation as metaphor for life. From dead wheat, to reborn dough and then transformed into food for the masses. OK, it was a little much but he also had some great insights into the science of bread.
The vendors were really amazing and plentiful. This was a pizza and artisan bakery expo. I tasted a ton of different pizzas, pastas, wings, breads, cookies and more. It was fabulous and we did not need lunch or dinner!
