In an effort to make more bread I did my calculations wrong and accidentally added too much water. It resulted in a severely failed batch of dough. I am very sorry but there will not be bread today.

Sadly we will not be attending the Winter Harbor's Farmer's Market tomorrow and going forward this summer. It was a very difficult decision but we need to focus on finishing a huge project on our house and because we are doing the work ourselves, I cannot dedicate the time to the market. (We spend 3 days before prepping and working with dough) we still will be making all our deliveries with the grocery stores on Fridays because most of our business is through our amazing retail partners. Thank you for supporting us through these crazy times, we are just slowing down for this season and look forward to returning to the market next year.

Sourdough is not for the faint of heart, it is a living thing. Sometimes it has a life of its own and a timeline of its own and I am limited by it. Today is no exception. We had to redo a batch and I have delivered a limited number of loaves to Winter Harbor Provisions just now and shortly to Acadia Provisions. Sometimes I think it would be easier to just work with yeast loaves but I am one of the crazy ones that has decided to choose to work with it. Enjoy!

After much research and recipe development, we are bringing blueberry croissants for the first time ever to Winter Harbor's Farmer's Market this Tuesday at 9. we have taken the blueberries and put them into the butter that we laminate the croissants with. They are as decadent as they sound.

One of the most satisfying parts of baking is listening to the bread talk as my kids say. Enjoy their conversation. And stop in at Winter Harbor Provisions for some fresh baguettes baked this morning!

It’s mix day for our Friday delivery in Winter Harbor. Here is a behind the scenes look at our sourdough that is ready to be formed into loaves and placed into baskets. It then spends a day in the refrigerator to further ferment. It takes two days minimum for our bread to be made from mix to bake. This long fermentation allows the natural yeasts to break down the carbohydrates and gluten as well as release nutrients from the wheat, making it is easier to digest.
