This week the pie(s) requested was strawberry rhubarb $15 for a 9 inch pie and $5 for a 5 inch. I raise most of the fruit that goes into the pies. I raise blueberries, blackberries, strawberries, rhubarb, peaches, apples and cherries. Call or message me if you would like to order.

No time for breakfast? Here’s a recipe I use quite frequently.
Ingredients:
1/2 of a 30 ounce bag of shredded hash browns (slightly thawed)
1 -8 ounce block of cream cheese
1 tsp salt
1 tsp pepper
1 tablespoon onion powder
I tablespoon garlic powder
(I also add 1/4 cup onion flakes)
1 lb sausage
8 ounces mild (or sharp) cheddar cheese plus extra for topping
18 eggs
1 1/2 cups milk
1/3 cup flour
24 large muffin tins generously sprayed with cooking oil

Cook sausage until browned. Don’t drain. Break up cream cheese and stir into sausage. Add mixture to hash browns. Add cheddar cheese and. seasoning and mix until well blended. Divide into the 24 large muffin tins.
Add flour to a bowl. Pour milk into flour mixture stirring until well blended.
Beat eggs until all eggs are blended together. Add flour/milk mixture and stir until well mixed.
Pour egg mixture over sausage/hash brown mixture. (Start with using 1/4 cup measure into each tin. Then add remaining mixture to make sure they are evenly coated).
Sprinkle tops with extra cheddar cheese.
Bake 350 degrees for 20-30 minutes or until the cheese is slightly browned.
At this time you are allowed to sample one for yourself for quality control purposes.
When cool, using a pie server, run the edge around muffin cups to gently loosen it.
Place in a sandwich sized bag and seal. I put several in a gallon ziplock bag before freezing. This makes it easier to store in the freezer and easy to grab.
To heat, remove from bag and place it on a microwave safe plate. Heat until warm.

These are such a timesaver. Kids can heat and eat on their own. I take some to my mother in law who’s 95. Quick and easy for her and healthy. My husband is in the Veterans Home. If he doesn’t care for what’s on the menu, he can microwave one and have it with some fruit. (He has a fridge in his room).

It has been a baking weekend. One order for a 9 inch strawberry pie. I also supplied some sweet treats for a bridal shower. I made cherry, peach and apple mini pies, Texas cake, blueberry and cherry streusel coffee cake. All were single serving size. (You don’t have to share if you don’t want to size😊).

My daughter reminded me just before I cut into the cherry pie that I hadn’t posted a picture of the finished product so here’s the end result. I also made a chocolate cream pie that will disappear tomorrow. (No, I’m only eating one piece and sharing the rest.) My taste testers today thought it was delicious. Enjoy the pictures. I love baking pies. My daughter asked for a strawberry pie, which I told her I could do. I have some rhubarb in the freezer so I might make some mini strawberry rhubarb pies too. Stay tuned…..

Our cherry tree is blooming and I still have bags of cherries in my freezer from last year. Decide to make a cherry pie and a chocolate pie for Easter dinner. (My husband bought me a cherry pitter that will do 6 at a time.) It really speeds up the process.
To keep everything from getting messy, freeze your cherries with the pits. When you’re ready to pit them, put them in the microwave. I had 2 gallon bags of cherries and put them in for a little over 1 minute for each bag. They will be slightly thawed but the juice will still be frozen. Run your cherries through your pitter. No messy juice.
I’m also making several of the 5 inch pies for a bridal shower next week. I made several of the 5 inch cherry pies and froze them. Will do the same for the other pies. The day before the shower I will pop them all in the oven to bake. I’ll be making an assortment of different flavors of pies with the fruit coming from our own home grown fruit. We have cherry, apple and peach trees. We grow our own strawberries, blackberries and rhubarb. We don’t use pesticides anywhere on our property.
Hungry for pie- come to the Farmers Market the first Saturday starting in May. Or call ahead and pre-order. They sell out fast.

Funny story - my 3 year old great grandson was at his grandma’s house. He asked her if she had any of that ssshhhhhh stuff. Not knowing what he was talking about, she said no. When she opened the fridge, he pointed to the can of whipped topping and said yes you do. So now in our family it’s referred to as that ssshhhhhh stuff.
Family is coming over tomorrow for our Easter dinner. I’m serving up barbecued chicken, cheesy potatoes, home canned green beans, apple salad, dinner rolls, deviled eggs, Texas Sheet cake, brownies, angel food cake with strawberries and yes plenty of that ssshhhhhh stuff.
(Not serving the traditional Easter menu since everyone has somewhere else to go next Sunday). Most of the items I’m fixing are favorite foods my family loves.
We will be having an Easter Egg Hunt also and there’s no age limit in our family. Lots of good memories. Love our family time.

Just for fun, a friend of my daughter’s won big at Bingo. I made a Texas Sheet cake for him to enjoy at the next night of Bingo. It happened to be on St. Patrick’s Day and who doesn’t like the color of money. I love seeing good things happen to those who are so deserving of a windfall.
