Did you know? Baking prosforas is a full day of work! From the moment the water is boiled until the last tray is taken out of the oven, 8 or so hours have passed - and that’s on a good day - not to mention waiting for them to cool enough to be sorted and stored. Even baking a small batch of only 100 or so prosforas is a 9-5 job!

Many outside factors can play into it, as well: the temperature outside, the humidity levels, what time of day one starts, and even the mood of the yeast. Fr Alexei would often say, “Yeast is disagreeable.” Yesterday at St Alexis, we started at 9AM and worked until midnight, and we baked 200+ prosforas, none of which were usable. Days like these are rare, but they do happen; they remind us to pray and not take for granted all the easy days. Glory to God for all things!

St Alexis Prosforas is a bakery specializing in Russian-style Prosfosas, Artos, and loaves for use in the divine services of the Eastern Orthodox Church. Our particular tradition is inherited from Fr Alexei Ohotin (+2013) of eternal memory, who dedicated the vast majority of his life to the service of the Church - which included baking prosforas. Fr Alexei, together with his wife, Tamara, would bake not only for their own parish (Holy Annunciation ROCOR in Flushing, NY), but for many other parishes as well, including: the Synodal Cathedral “of the Sign” in Manhattan, New Kursk-Root Hermitage in Mahopac, NY, and Our Lady of Kazan ROCOR in Newark, NJ.

St Alexis Prosforas strives to glorify God and honor Fr Alexei’s memory by continuing just one of his many “podvigs,” baking quality prosforas. It currently operates out of Intercession of the Holy Virgin and St Sergius ROCOR in Glen Cove, NY. Two of Fr Alexei’s many grandchildren - Peter and Nicholas Antchoutine - do the baking.
