Every ingredient in this sandwich took 48 hours of slow-fermented dedication to earn its place!
Maybe we're a little bit unhinged for packing seven distinct, bold components into a single focaccia sandwich, but we make zero apologies for the Figgy Brie. When you start with a golden, airy slab of focaccia that we slowly ferment for two full days in our kitchen, the toppings have to rise to the occasion.
We slice savory Citterio rosemary ham, slather on creamy brie, add sweet fig jam alongside crisp sliced apple for that perfect bite. Then we pile on peppery arugula, a rich balsamic drizzle, and a final dusting of freshly grated pecorino romano. It's a sweet and salty masterpiece that feels like an entire Italian market holiday packed between two pieces of handmade bread.
We'll be baking fresh and hand-assembling these beauties this Thursday evening at the Fullerton Night Market. Come grab one and see why the slow-craft process makes every single layer worth the wait.
