Day 6: Virgil’s First Day on the Job! 🫧🧇

Six days ago, Virgil was nothing more than some dried flakes in a bag. A flour, a little water, a whole lot of patience, and here we are!

Today, he received his first assignment…

BUCKWHEAT SOURDOUGH WAFFLES! 🧇

This is our first test batch and I wouldn’t change a thing!
Golden brown on the outside, light and fluffy on the inside, with that wonderful earthy buckwheat flavor.
We’ll be testing how well these freeze and toast back up.

Well done, Virgil. I think you’re going to fit right in! 🐌🍞

Day 4: Virgil has plans! 🫧🍞

Yesterday was all about watching Virgil rise. 👀After his morning feeding, I marked his starting level and took pictures throughout the day.
📸 7:52 am freshly fed.

📸 1:34pm 5 hrs and 42 mins later bubbles are appearing and we have some movement.

📸 5:15pm 9 hrs and 23 mins later more bubbles and more growth.

We’re still learning how long it takes him to reach his peak. He certainly is keeping me curious! 🤣

I’ve been wanting to experiment with buckwheat, and what better way to start then with waffles?

The plan is to make them ahead, freeze them, and see how beautifully they toast back up.

Not bad for a fellow who arrived in a little bag of dried flakes a few days ago❤️🤣

Y’all. It’s a miracle these loaves got here today.

Let me paint 🎨 the picture.

I’m driving them over still warm from the oven, and the smell of freshly baked sourdough filling my car. And my stomach starts growling.

I seriously consider pulling over and tearing into one 🤣

But you’ll be happy to know I exercised some self-control.

All loaves made it safely onto the shelf. Untouched. You’re welcome. ❤️🤣
