As the temperatures rise, we’ve been thinking about cool and refreshing ways to sweeten up the summer.

This dessert also brings us back to childhood — when desserts weren’t overly rich or sugary. It was often fresh fruit, simple jellos, and lightly sweet treats flavored with coconut cream and pandan. Just enough sweetness to end a flavorful meal in a comforting way.

Today, we’re excited to offer our coconut jello dessert in three flavors:

🥥 Classic Coconut — topped with freshly grated young coconut
🌿 Pandan Coconut — made with fresh pandan extract blended into the coconut
🥭 Coconut Mango — served with fresh sliced mango

Light, refreshing, aromatic, and not too sweet — the perfect finish after a delicious meal.

Less than five.

So when I say this is no small feat, I truly mean it. The barriers, the challenges, and the dedication it takes to bring a Lao cookbook to life—I can only imagine.

I’ve had the honor of meeting a few times, and he is genuinely such a gentle, thoughtful, and generous soul when it comes to sharing Lao food, culture, and community. He’s the real deal, and I cannot wait to sit down and read this book.

What an honor it was to cater for the Asian American Graduation at Clovis Community College.

Seeing graduates and families proudly wearing their traditional attire—Lao, Hmong, Filipino, Indian, and so many others—was a reminder that while our stories may be different, we are deeply connected.

That’s what makes America so special. We all bring our own flavors, traditions, and perspectives to the table, and together they create something vibrant and meaningful.

Being different is not a weakness—it’s our strength.

And honestly, that’s a lot like food. Every ingredient has its own identity, but when brought together with care and respect, it creates something even more beautiful.

No one chooses to be LGBTQ+, but we do get to choose to live as our authentic selves and how we show up in a world that often tries to place us in a box. And when we don’t fit into those constructed spaces, life can become more challenging.

That’s why our hearts are so full knowing that a place like Clovis Community College openly chooses to support the LGBTQ+ community. As someone who is part of this community, this truly means so much—it’s healing, affirming, and gives hope.

The question came up: who makes the best nam khao?

The answer really depends on how you like it.

At Khin Khin, our version starts with housemade curry and fresh ingredients, shredded coconut carefully bblended to coat every grain of fragrant jasmine rice. It’s then shaped into croquettes and fried to achieve that signature golden crisp.

Once broken apart, you get the perfect contrast of textures—soft and crispy in every bite. It’s tossed with minced fermented pork, aged to a sour perfection, and served as a lettuce wrap with fresh mint and herbs.

Each bite hits all at once—crispy, tangy, umami-rich, herbaceous, and spicy, lifted by the heat of side peppers and the crunch of roasted peanuts.
