Phase 3 (a couple days late, sorry!) ...
We had never owned a restaurant. We had no business plan. What we did have was passion in our new lifestyle and a drive to make this bakery work.
Our lease space was literally a lingerie store. We spent one of our remodeling days scraping gold glitter off the floor. We battled the city for a few weeks to get all our inspections/permits, because inspectors were placed on phones to field COVID policy questions. We were finally able to open April 2020. Our first few months we had a line out the door every Saturday! We expanded hours, published our website, and hired staff shortly after our 1st birthday, but then had to endure setbacks when I had hip surgery and our daughter had back surgery.
A lot of people out there still don't support us, if you can believe it. All we can do -- as a wise therapist told us years ago -- is just live our lives and be happy. We do that by showing our kids the results of busting your butt, taking responsibility & leap after leap after leap of faith. Our motto has always been, "If it doesn't work, we'll just do something else." What you need to know about Mark & I is that we are fighters, not in the aggressive sense but in the never-giving-up sense. We are strong, and we love with all we have.
Side note: A nasty rumor is being spread that we are closing the bakery. No way!! We are moving to a house a little further down the road and actually searching for a 2nd bakery location. :) Here's to Phase 4, which will begin when we turn 2 next month!

Our story, 2nd Phase ...
This was the trip where we made the 100% plunge into veganism. Summer 2018, Grand Canyon road trip with 3/4 of the kids, RV and middle school angst in tow. Mark and I had been reading How Not To Die by Dr. Michael Greger, and with every chapter we ruled out more damage we could no longer put our bodies through. We both grew up with southern cooking and heart disease, cancer and diabetes running rampant in both families. Eating animal products just didn't make sense with lessons we were trying to teach our kids about taking care of their bodies for the sake of their future and those who love them. We decided if we could stick to this on a road trip vacation, we could stick with it forever.
Fast forward to late 2019. Our construction business was a big stress ball, and we began to put a business plan together for a bakery. Our original plan was for the bakery to be supplemental income, but COVID made it primary instead. Opening at the onset of a pandemic may sound outrageously dumb, but we were able to open slowly and grow as we needed to vs having to downsize because we started out too big. We found a lease spot literally down the street from our house and started building our new dream.

Our story, 1st Phase ...
Mark & I met Junior year in high school, and life has been nothing short of an adventure ever since. We moved to Wedgwood in 2016, to what our neighbors would soon refer to as "The Joy House." After losing our construction business when COVID hit, we decided to jump head first into what had been up until that point just a fun idea we would toss around from time to time : Open a bakery!
We had never owned a restaurant before, and our family, friends & exes thought we were completely off our rockers. Never underestimate the power of faith and sheer will to prove everyone wrong. Even in the midst of attacks from those who wished the worst for us, we have perservered for almost two years.
