Gearing up for the next two days of Thanksgiving prep and cooking. On the menu is my herb brined turkey, crusty corn, poblano and chayote squash casserole, chipolte-tomatillo braised calabaza, caramelized andouille sausage spoonbread, my yukon gold mash, caramelized pumpkin-pear crumble and crystallized ginger-fuji apple crisp. has been a week now since leaving my last consulting job at and for a private club....taking some time off before starting a top secret project in the fall...so doing more research in a couple of weeks in Chicago again then maybe a couple of more places too hopefully....thank you to everyone who has and continues to support us here at Culinary Magic...and to all of those who inspire us and that we support...thanks again..Chef J

finally watched Jiro Dreams Of Sushi today....such a great doc/movie and very inspired now to move on to much better things and places to work and cook at and make my style of food and cuisine....plus going back to Chicago in about three weeks time for more research and Riot Fest....
