One of the many components to a perfect macaron "coque" (shell) is making a flawless meringue. Tried and true is to "age" the egg whites prior to whipping them. Aging simply means to break open your eggs a couple days in advance and store the whites under a cheesecloth (refrigerated) so that moisture can evaporate while keeping the protein bond the same.
