Tonight I made vegan and gluten friendly lemon olive oil mini cakes!
They’ll be available next Thursday at The Rusty Bee Lounge for my bake sale. I am trying to think of what to top it with - glaze, frosting or powdered sugar. What do you think?

Slight change of plans on my menu. Sprained my ankle last night and didn’t have any freeze dried pineapple (not going to the grocery store due to my limp!) so my gluten friendly sugar cookie cakes now have this delicious Springy marshmallow buttercream with:
Raspberry, mango and strawberry added to it!
I’m actually reallllllly happy how yummy it turned out!
