I’ve spent a lot of time lately planning for summer—looking at menus, farmers market prep, production schedules, and how I can best serve all of you while staying true to what Simply Sourdough is all about.

After giving it a lot of thought, I’ve decided to separate our pre-order pickup days and farmers market days for the summer.

Starting this month, pre-order porch pickups will be on Tuesdays, while you’ll find us at the Evergreen Park Farmers Market every Thursday from 8 AM–1 PM beginning June 18th.

This change allows me to focus on quality over quantity. I’d rather make fewer things really well than try to do too much at once.

You’ll also start seeing more variety throughout the summer. Think rotating cookies, scones, coffee cakes, cinnamon rolls, bagels, and other sourdough treats making appearances throughout the season.

This week’s menu drops tonight for Tuesday, June 16th pickup, and you’ll see a few favorites returning along with a more focused menu.

And if you’re coming to the farmers market this summer, we’re planning some fun *new* breads, focaccia flavors, and seasonal specials that may not always make it onto the pre-order menu.

The bagels that many of you picked up today started their journey days ago.

Tuesday night, I fed my starter. Wednesday morning, I mixed what is by far the largest batch of bagel dough I’ve ever made. Then the waiting began.

One thing about sourdough bagels that surprises people is that they aren’t difficult because the dough itself is complicated. They’re difficult because they take time, patience, and a lot of hands-on work.

After mixing, the dough bulk ferments before heading into the refrigerator for a long cold proof. That overnight rest develops flavor, improves digestibility, and gives sourdough bagels that signature tang.

Then came Thursday.

At 8:30 in the morning, I started dividing dough. Every bagel is weighed individually to 150 grams, rolled, shaped, rested, reshaped, proofed, boiled, topped, baked, cooled, and packaged.

Yesterday’s batch was 70 bagels.

Each one needed its own parchment square. Each one needed to be checked for proper proofing before boiling. If a bagel isn’t proofed enough, it sinks. If it’s ready, it floats.

From shaping the first bagel to pulling the last tray from the oven, I worked on bagels until around 2 p.m. before moving on to breads and cookies.

And as every baker knows, large batches teach lessons.

This was my first time making this much bagel dough at once, and I learned a lot. The warmer temperatures in my bakery and dough that was slightly warmer than ideal caused some of the bagels to overproof. A few split on the bottom during baking—not because anything was wrong with them, but because fermentation moved a little faster than I planned.

The good news? They still taste exactly the way I want them to taste. Chewy, flavorful, and packed with that sourdough tang.

The better news? I already know what I’ll adjust next time.

That’s one of the things I love most about baking. Every bake teaches you something. Every batch makes you better.

Farmer’s market season is almost here!

In just 15 days, we’ll be setting up at the Evergreen Park Farmers Market every Thursday from 8 AM–1 PM, and honestly, we’re excited.

One of my favorite parts of the market is getting to see so many of our regular customers each week and meeting new people from the community. It’s a lot more baking, a lot more dough, and a lot more early mornings, but it’s so worth it.

As we’re getting ready for the season, I’d love your input.

When you stop by the Simply Sourdough tent, what do you want to see?

More bread flavors? Different bagels? Cookies? Focaccia? English muffins? Cinnamon rolls? Something completely different?

Everything we make is sourdough, and your feedback really does help decide what ends up on the menu.

Also, a quick reminder that we’ll still be offering pre-orders for pickup at either the farmer’s market or our home, just like last year. The only change is that market pickups will need to happen between 8–9 AM due to the summer temperatures. If that time doesn’t work for you, home pickup will still be available later in the day.

After quite a few rounds of testing, tweaking, and taste-testing, I’m finally at a place where I’m really happy with my sourdough bagel recipe!

Over a week ago, I shared a few packs with some of you, but I still had a couple adjustments I wanted to make. I’m happy to say the latest version is everything I was hoping for—lighter in texture, perfectly chewy, and with that delicious sourdough tang that makes them so good.

Because of that, bagels will be making regular appearances on the menu (just not every week!).

I do have one fresh 4-pack available for pickup today or tomorrow—they were just baked today. They’re $12 per pack.

If you’d like to grab it, send me a message or comment below. Prepayment is required to reserve.

And if you can’t enjoy them right away, they freeze beautifully!

Our next menu dropped tonight for Thursday, June 11th pickup!

A quick heads up that we’ve officially moved our pickup day to Thursdays for the summer and have adjusted pickup times a bit for our summer schedule.

The following week is also a big one for us—we’ll be kicking off the Evergreen Park Farmers Market at 89th & Kedzie! We can’t wait to be there each Thursday from 8am–1pm alongside so many great local vendors.

As we settle into market season, you’ll notice that our pre-order menu and farmers market menu won’t always be exactly the same. We’ll be bringing some fun extras to the market like bagels, English muffins, coffee cakes, new flavors, and other seasonal goodies. You’ll also be able to place pre-orders for farmers market pickup, then shop around and grab anything else that catches your eye while you’re there.

A few quick updates from Simply Sourdough Bread Company as we head into warmer weather and market season! ☀️🍞

As temperatures rise and our bread cabinet stays consistently full throughout pickup windows, I just wanted to remind everyone how important it is to choose a pickup time that works for you whenever possible. The pickup windows are designed to help keep bread and pastries moving quickly from the oven to your home for the freshest quality possible.

If something comes up and you can’t make your pickup window, no worries at all — just send me a message on Hotplate, Facebook, Instagram, or text me to let me know! I’ll do my best to pull your order inside and arrange another pickup time with you. Since I refill the cabinet throughout the day, orders left past pickup windows may occasionally need to be moved if space is needed for incoming pickups.

I truly want every loaf, pastry, cookie, and bake to get to you as fresh as possible the same day whenever I can. 💛

Another big update — we officially return to the Evergreen Park Farmers Market on Thursday, June 18th for our second season! 🎉 Because of that, we will most likely NOT have a preorder pickup that week while I get back into the swing of market prep and focus on quality over quantity.

I’m also working on some exciting new products and behind-the-scenes changes for market season, including possibly adding a separate pickup day alongside market weeks. Lots of exciting things are in the works over here!

Thank you all so much for your continued support, reviews, messages, shares, comments, and weekly orders. Truly, thank you for allowing me to bake for your families every week — it means more than you know. 🫶
