Recipe testing in the bakery is one of my favorite ways to spend the day 🤤

Sometimes the “just one quick test batch” turns into standing over the counter eating warm crackers straight off the tray, trying to decide if they’re ready for the menu yet. 😂

This is our newest sourdough cracker experiment - thin, crisp, buttery and loaded with savory seasoning and seeds. The kind of snack that somehow disappears faster than the bread around here.

One of the best parts of Wild Bandit Bakery is that, often, our menu items started because a customer asked for them, encouraged us or helped us test ideas along the way.

If you want first access new items when they drop, make sure you’re signed up for our text reminders. Our menu opens every Thursday morning and some things sell fast.

There’s something truly special about finally using a piece of equipment that allows your craft to fully shine.

After months of waiting, we’re officially baking in our new bread oven by - and honestly, the difference was surprising…

With thick baking stones, a glass door baking chamber and programmable steam injection, these loaves are baking more beautifully and consistently than ever before. The rise. The shape. The crust. Every batch coming out of this oven has that deep golden color and the bubbly artisan texture I’ve always loved in truly exceptional sourdough.

And yes, I absolutely did sit in front of that oven door to watch my bread bake for the first time. 🤎

It still feels like the same honest, long-fermented bread… just elevated.

We’ve spent the last 6 months building Wild Bandit Bakery one bake at a time and this feels like a huge step forward for us. More consistency. Better texture. More capacity. More menu items coming soon.

When we decided to bring on a coffee vendor, it was important to us to find local roaster who partnered directly with a coffee bean farmer to produce a delicious single origin roast & Langley Cattle & Coffee does just that.

Langley Coffee is built on a simple standard: great coffee starts with great beans. Every variety is carefully selected from high-elevation farms in El Salvador known for producing specialty-grade coffee, then roasted in small batches to highlight the unique character of each origin.

They source these clean, high-quality beans from a family farm that prioritizes responsible growing practices, healthy soil, and meticulous processing methods from harvest to roast. Each batch is carefully handled and sealed in one-way vented bags to preserve freshness and flavor.

Some mornings are a little messy at Wild Bandit Bakery…

And honestly? That’s kind of the point!

Real sourdough is ALIVE - It rises, spills over jars, takes its time and it can’t be rushed.

Before the crackling crust and the golden brown loaves cooling on the counter… there’s this part. Bandit on the counter, sometimes overflowing.

The old way still works.

Every loaf we bake starts with a living culture that we feed and care for daily. That slow process is what creates the flavor, texture and digestibility people have loved for generations.

Reviews like this mean a lot to our little bakery & farm. 🤎

Nathaniel has been a farm and bakery regular for some time now. It’s always a joy to see his name pop up on the weekly orders and to chat with him when he stops by for pick-up. One of the many beautiful blessings of sharing this bread and farm food with the community are the wonderful new friendships we make along the way. God is good to us.

What started with a few loaves of sourdough has slowly grown into a fuller table of bread, raw milk, pasture-raised meats, fire cider, and food made with the same steady care from beginning to end.

First bake in the new oven! 🤠

After six months of baking with a 2 loaf Dutch oven, today feels like a BIG step forward for Wild Bandit Bakery.

This new oven gives us controlled steam injection, more even bakes, and room for 12 loaves at a time - which means we can finally begin expanding the menu the way we’ve dreamed to since launch.

This means…
More bread.
More consistency.
More room to grow slowly and do things well.

Still the same 48 hour long-fermented dough.
Still the same Friday rhythm.
Just a little more capacity behind it now - I feel like I have a new assistant in the kitchen!

So grateful for everyone who’s supported this little bakery from the beginning. You mean the world to us. 🤎
