I know it's Pi Day (3-14)...and I really should be making pies. But I just can't. I'm missing my Mom today 😢She went to her heavenly home 3 weeks ago today. Honestly, I'm struggling just being in my kitchen....so much reminds me of her. And it's POSITIVE thoughts....I'm just sad that she is no longer here. In honor of her, I did muster up enough energy to at least make one of her favorite jello desserts. It's a scrumptious orange jello dessert with a lemony topping.
6 oz. orange jello
2 c. (16 fl oz) boiling water
2 c. (16 fl oz) ice water
15 oz. mandarin oranges, drained
1 1/2 c. (12 fl oz) milk + 3.4 oz instant lemon pudding
1/2 c. (4 fl oz) milk + 1 envelope Dream Whip + 1 tsp. vanilla
Mix the Jell-O with boiling water until dissolved. Add ice water and stir until the ice melts. Pour into a 7 x 11 dish. Refrigerate 30 minutes, then stir in mandarin oranges. Once completely set, add the topping. For the topping, mix the milk + pudding in a bowl. Set aside. Beat the milk, Dream Whip, and vanilla in a mixer on high for about 6-8 minutes until peaks form. Combine the pudding and whipped cream together. Spread over jello. Refrigerate.
