HŌJICHA SHORTCAKE WITH FRESH FIGS

Layers of hōjicha cake are filled with fresh figs and cream made with fig confiture. Topped with more fresh figs.

CAKE AU CITRON WITH EUROPEAN-STYLE IRISH BUTTER

This week’s Cake au Citron is made with European-style Irish butter, with dried apricots and peaches folded into the cake. It’s finished with a lemon glaze made with fresh lemon zest.

EARL GREY SWISS ROLL WITH ORANGE, GRAPEFRUIT & HUCKLEBERRY

A fragrant Earl Grey Swiss roll filled with bright orange cream and fresh grapefruit.

The top is finished with huckleberry cream, bringing a beautiful berry tartness to the citrus and the delicate aroma of Earl Grey tea. Floral, refreshing, and full of late-season color.

GLUTEN-FREE ROYAL MILK TEA CHIFFON CAKE WITH PEACH & RASPBERRY

A light and airy rice flour chiffon cake infused with the rich, fragrant flavor of Royal Milk Tea.

Inside, the cake is layered with fresh peaches, raspberries, and raspberry confiture cream. The entire cake is finished with a smooth apricot confiture cream, bringing a gentle fruitiness and a lovely balance of sweetness and tartness to every bite.

Gluten-free. Please note that this cake is prepared in a kitchen where wheat is also handled and is not recommended for anyone with celiac disease or a severe gluten allergy.

ORGANIC BARTLETT PEAR & FRESH FIG TART

A late-summer tart with a little surprise hidden inside.

It begins with pâte sucrée, almond frangipane, and house-made fig confiture, followed by silky custard, house-made cherry compote, and pieces of fluffy shortcake sponge. The center is wrapped in whipped cream, covered with delicately layered organic Bartlett pear compote, and surrounded by fresh figs.

Soft pear, ripe figs, bright cherry, and almond come together in every layer.
