Not mold, just my loaves being dramatic. 😂

Those little dark spots you may sometimes see on the bottom of your loaf are water marks from baking, not mold. When a few droplets of water are left in the stainless steel pans, they can create small burn marks on the bottom of the bread during baking.

Why stainless steel? I choose to bake in stainless steel because it’s durable, non-reactive, and avoids many of the coatings found on other types of bakeware. It’s one of my favorite choices for keeping things simple in the kitchen.

So if your loaf has a couple of little dark freckles on the bottom, no worries. It’s just a little evidence of the stainless steel baking process.
