Important bakery update:

We will be closed until Thursday 9/21.

The writing has been on the wall for some time now that we need to make a big shift in our business model. We have been optimistic that we were always “right around the corner” from making ends meet each month, but after 11 months we have decided a change is necessary in order for us to stay open.

The plan for now is to only be open Thursday-Saturday. This shift will allow us to be more financially stable as well as lean into our creative sides a bit more and offer the types of items we originally built the business on. This change will also allow us to do some of the things we have been wanting to do for a long time: bread baking classes, focus more on produce from our farmers, late night dessert pop ups, ticketed dinners, and relaunching our bread subscription and delivery program.

We are still planning and regrouping and we will have more official details in the coming days, including the links to sign up for subscriptions/deliveries.

Thank you to so many of you for your unwavering support. This has been a dream job in every possible way and we are all so thankful for the chance to feed this wonderful community. We very much look forward to being apart of your dinner table again in the near future. We believe that this change will help sustain the business, better reflect the personalities and passions of our team, and allow us to deliver higher quality and more consistent products.

Bread for eating.

We try pretty dang hard to make each loaf of bread look beautiful. We go through a lot of extra effort, for three days, and we wait in hopeful anticipation while the bread is in the oven.

But at the end of the day, we want to make bread for eating. Bread that tastes good. That nourishes. That makes you feel full. Bread that takes you to some place else—Taste is all memory. What have I had before that tastes like this? Where was I? Is this the first time? Maybe it takes you to your grandma’s kitchen. Or to that trip you took as a kid to the Grand Canyon and that bakery you stopped at along the way.

It is just four ingredients: salt, water, yeast, flour. But it can be so much more than that. ❤️

Well, we’ve been sitting on some news for awhile now:

This fall, we will be opening up Blue Spruce General Store in downtown Davenport.

We will offering grocery items, high quality meats and cheeses by the pound, light breakfast and coffee, a small lunch menu (including sandwiches on our sourdough bread of course), and a pastry case featuring the very best items our bakery has to offer. The main goal is to meet the grocery needs of the employees and growing number of people living downtown.

As many of you know, we’ve been struggling with outrageous temperatures in the current bakery kitchen, so the general store kitchen will also serve as a home for our bakery operations.

Now it is time for the sappy stuff. All of this would never be possible without our amazing, loyal customers. And it definitely would be possible without a kickass team. Which we are lucky to have. So many people behind the scenes have put in their blood, sweat, tears, and DID WE MENTION SWEAT into making this bakery dream into a reality.

Now the hard work starts! We are excited to begin to meet our neighbors and members of the downtown Davenport community.

If you live or work downtown and there is something you’re wishing you could buy (instead of going to Aldi or hyvee, etc) do not hesitate to message us!

We are running a special for this week only!

Lemon Cream Pie w/ Strawberry Rhubarb topping and an Oatmeal crust. This is the perfect combo of light, creamy, sweet, and tart. Plus a buttery/savory/nutty finish and crunch with the oatmeal crust.

We normally don’t like to toot our own horns over here. (Partially because we usually see every tiny flaw in ever product.)

But we are realizing more and more what huge accomplishment a loaf of bread like this is. Challenge #1 - the dough was mixed and fermented in a 95 degree room. This makes things very, very difficult, damn near impossible.

Challenges 2 through 4 - it is a 100 percent sourdough loaf (no yeast), it is stone-ground flour (which can hard to bake with) and it is 40% whole wheat flour. (The more whole wheat you use, the harder it is to get a nice, tall loaf.)

Add all of that together and you have a very difficult task in front of you. So when we have a gorgeous loaf like this (made w/ all organic, regionally grown flour from ) we get pretty damn proud.

We are working on stopping to celebrate more lately, if you couldn’t tell 🙂
