Alrighty friends….. here’s my most popular (and biggest PITA) cupcake I’ve ever done. I actually won the southeastern cupcake wars with this one!

These are such a time suck that I discontinued them when I switched to wedding cakes, but a loooong time friend, veteran & police officer requested some & like gam-gam always said, “might as well make while you’re making!”, SOOOOO… I made extras so some lucky people could have them also!

For your palette pleasing pleasure: Pancake cupcakes with salted maple Swiss meringue buttercream, topped with a pancake & bacon and garnished with a pipette of maple syrup.

I have 4 dozen of them. They are $30 per dozen & are ready now!

And with that, the 2026 Spring wedding season comes to an end!
Since mid-April, We made 55 wedding cakes, countless anniv tiers, loads of cake tastings, grooms cakes, kitchen cakes, birthday cakes, and more!!!

I did the math & best I can tell we made almost 500 pounds of buttercream!!!

July will be a welcomed rest before fall wedding season kicks in!
