May has been such a blast, celebrating the re-release of our Grainbow Shortbread Cookies. 🌈 This product makeover came about with funding from a grant, for which I am deeply thankful.

The first pic is a portrait of many (certainly not all) of the people who play a part in making these cookies happen: the Moon Family Farm and Palouse Heritage grain farmers, the Ethos Stone Mill miller, and the bakers. It was very special to snack on shortbread with all of you! 💛

The thing I love most about the Grainbow is that it is just a bag of cookies (nothing more casual or fun than that!). And it also sneakily represents something a little profound: the sort of flavor that is only possible with regionally focused grain farming, local mills, creative bakers, and the magic that happens when all of these efforts come together. When you snack on a Grainbow, you’re tasting the product of a community built on mutual respect and support. I can definitely taste it, but maybe I’ve just eaten too many of them 😉

Shout out to Angela and the crew, Kim and Maddie at , and Eva and Dana at for hosting Grainbow tastings this month. And to my friend, Heidi, who made sure to match the cookies when she came to be my helper 😍🌈 You are all amazing and I had so much fun!

Today! Cookie samples, free stuff, WINE, books, whole grain treats, good vibes, community 💖

Stop by this afternoon for double the pop-up fun. I’ll be there with I Have Lived a Thousand Lives bookstore (so excited for this). She has books and bookish crafts, I have cookies and a ‘lil party for my ‘lil grainbow shortbread, Kim’s pouring the wine. 🥳 🍷 🍪 📕 I’m there 2-6pm!

My mom was bakery fan #1 and she was known to stop a car in half a second flat if she happened to spot a new one. I used to threaten that I was going to put a bumper sticker on her car that said “I brake for bakeries” to give the vehicles behind her fair warning. 😉 This one goes out to her!

And funny story, the first time I uploaded the design I used the wrong version of brake, so there are two versions: I brake 🚘 or I break ☕️, you choose! (Maybe both!) 😂 Grab yours (free) at an upcoming Grainbow sampling (such as May 23 at or May 24 at !!).

Who remembers the first Grainbow?! Back in 2020, in the early days of figuring out what sort of bakery I wanted to be, this little idea popped into my head. A stack of shortbread but make it a chromatic arrangement of grain colors (& flavors)—and why not call it a grainbow?!

Like all good ideas it was really more of a remix. I’d been attending grain-focused classes and conferences for several years and had heard the word “grainbow” thrown around. In early 2020, I went to a workshop where they had several kinds of whole grain shortbreads for us to sample. They were all so good that I couldn’t pick my favorite. When my friend Nella Mae asked if I could make shortbread to sell at her farm stand, I remembered how fun it was to try the different grains and thought, what if...

Grainbow Shortbread has changed over the years as I tried different grains, quantities, and packaging (goodness, I used to write all the labels by hand 😵‍💫). You’ve always loved it, which gave me confidence to keep highlighting grains in my baking until I became a 100% whole grain bakery.

In 2022 I met Angela from Ethos Bakery and started using their fresh milled flours. In 2025, Angela approached me with an idea to collaborate on a product that features flours. I applied for a business builder grant and was awarded funding to develop this “Grainbow 2.0”: a celebration of regionally (& sustainably) grown, fresh-milled grains, at a production scale that could reach a wider audience than I could bake alone.

🌈 Here we are!! After a year of planning, test baking, consumer sampling, and ironing out what feels like too many details, we have ourselves a pretty special Grainbow Shortbread.

This product is baked by Ethos Bakery with their fresh (nutritious & delicious) flours using my shortbread recipe and sold under the Grain Queen label. It is better to go together, ya’ll!! I’m so proud of the work Angela and I have done to bring this to you and I can’t wait to see them on shelves—starting TOMORROW!

🏴󠁧󠁢󠁳󠁣󠁴󠁿 I packed a grainbow with me to Scotland, land of rainbows 🌈 and birthplace of shortbread. A little presumptuous, maybe, but I couldn’t resist. After carrying it with me while we explored the (stunning) Isle of Lewis, I left it with our hosts at . Sarah, our host, waited a few days until she captured a shot of it with a rainbow in their front garden (second pic). It looks good in Scotland, don’t you think?

During our outing, I snapped a shot of it at the bluff above Reef Beach, with the grainbow playing the role of a watergaw. I learned this word ages ago when I was a student at University of Glasgow studying Scottish poetry. I’ve never forgotten the Hugh MacDiarmid poem, The Watergaw, and this mysterious word that describes a rainbow fragment at the edge of dark storm clouds. In Mac Diarmid’s poem he describes the watergaw as a “chitterin’ licht ayont the on-ding” or: trembling light beyond the downpour. There’s something magical about how a word (& a poem) can change the way you see the world. Since then, I’ve looked for watergaws every place I’ve lived.

I’m thrilled to share the new Grain Queen Bakehouse logo! The transition is complete: today I’m saying a dear goodbye to Teahouse Bakery and all it was for 7 years, and a warm welcome to the Queen and her reign of grain 🌾 🌾 🌾 As her humble baker, I couldn’t be more excited to fly this new banner.
