We have been experimenting with some of our cake scraps lately. Reducing waste and playing with big flavors is our jam. Or in this case: our jang. We made our very first gochujang a few months ago inspired by a post on our friend ’s new Substack. Today seemed like time to do a status taste test. Most experiments have us excited and confused and inspired and nervous and ready to share a little with friends for feedback and insight.

This gochujang is made with Hey Gourdgeous cake scraps and we are about to find out if it is good before we start similar attempts with different flavors of cake. Knowing when to switch from fermenting to refrigerating is going to take some more experience and confidence than I have.
