Balsamic Bruschetta
- Sliced, toasted baguette
- ½ cup garlic oil
- 2 diced roma tomatoes
- Sliced fresh mozzarella
- 1 Tbls. Extra virgin olive oil
- ¼ tsp. salt
- ½ tsp. black pepper
- Balsamic glaze
Brush toasted bread with garlic oil, top with fresh mozzarella and pop in the oven until cheese is melted. Mix tomatoes, salt and pepper, basil, and oil and top the melted mozzarella with this mix. Drizzle the balsamic glaze over the top and enjoy!
Greek salad with Garlic vinaigrette
- Fresh greens
- Roma tomato, diced
- Kalamata olives, sliced
- Cubed, fresh mozzarella
- Diced cucumber
*Dressing
- ½ C. olive oil
- 1 tsp. Red wine vinegar
- 1 tsp. fresh squeezed lemon juice
- 1 tsp. Italian seasoning
- ¼ tsp. salt/pepper
Place greens, all the diced veggies, and cheese in a dish. Set to the side. Next, in a mason jar, toss in all the ingredients for the dressing and close the lid. Simply shake to combine and pour over the salad! Enjoy!
Creamy Parmesan Pesto Chicken
-2 large chicken breast
-3 Tbls. Butter
- 4 garlic cloves, minced
- ½ yellow onion, diced (optional)
- ½ cup roasted red peppers, sliced (optional)
-1 C spinach (optional)
-1/4 tsp. paprika
-1 ½ C. heavy cream
-1 Tbls fresh pesto
-1 C grated Parmesan
-1/4 tsp. red chili pepper flakes
-1/2 cup white wine
¼ tsp. black pepper
- Salt to taste
~Cut chicken breast lengthwise. In a skillet set to medium, medium-high, melt 2 Tbls of butter. Season chicken with salt and pepper on each side, until almost cooked through. Remove from pan and set to the side.
~In the same skillet, add 1 Tbls of butter, onion, garlic, peppers, paprika, red chili flakes, and a pinch of salt and pepper. Sauté for about 5 min, until onions are softened.
~Add the wine to deglaze the skillet and simmer until reduced by half. Lower the heat, add the cream and constantly stir until sauce starts to thicken and a nice cream sauce forms. Add Parmesan cheese and continue to stir until incorporated into the sauce. At this time, add in as little or as much pesto as you would like. *** Pesto can be strong, so adding a little at a time and tasting along the way is the best method. Add chicken back to the pan and let simmer for 5-7 min. If adding spinach, toss in at the end and let the heat from the sauce wilt the leaves.
