A lazy day today, I’m taking my Xmas break, but still have to cook for the fam. So family meal today is Spaghetti alla chitarra with chicken Parmesan.

Prepping for a wine tasting event. From
Start to finish Housemade Buttermilk Ricotta And Spinach Ravioli. Next up some Southern Italy style pasta, noting but Semolina Flour and hot water, making Corzetti yayyyyyyy.
It is a pasta day today. My favorite Pasta Machine, my pasta making fork and my Ravioli stamp. And my Garganelli board. Going to make something simple. I love making pasta. Later this week I give out my secret egg yolk Dough. I usually use a heavy egg yolk dough for my Ravioli dough.

I love Pastelitos, Handpies, Empanadas, Paszteciki,Patty, Samosa, every culture has them. eating with your hands is the best way to consume any food; by using your fingers, you bring the sense of touch into eating. To me if I had only thing to cook for the rest of my life it would be the Humble, the Hardworking, and everybody loves them the 🖐 Pie.
One of my goals is to highlight Puerto Rican and Cuban Cuisine. I want to feature my people food, I want to feature the heavy African Influences in Latin American Food, from Puerto Rico to Peru. Nuevo-Latino Cuisine.

Pastry 🥮 Chef life. Jamaican Spice Rum Pineapple upside Cake. Making it for a private dinner 🥘 today. Topping it with vanilla Bean Chantilly Cream and grilled 🥥 Shavings. Secret instead of using Milk, replace it with Full fat Coconut 🥥 Milk. Also another tip, the 4 one I made the fruit is a little offset, instead of pouring your batter into the cake pan ladle the batter into the pan, the fruit will not move.

Sharping this beautiful artwork. My Misono Sujihiki. My setup for sharping my knives are, 1000 grit stone, then to a 4000 grit, then a nice polish job on a 6000 grit, then to a leather strap. Your knives will be razor shape. Not picture my 4000, 6000 grit stone.

It might be seem like a lot but it is so much better.
Curry and Annatto Spice Pate Brisse ( Flaky butter Pie dough) For Jamaican Beef Patties. You can see all the butter in the dough. To make a rough puff pastry ( Pate Brisse) use European butter and fold multiples times to get that flaky crust.

I know I know, I’m always talking about mom and pops, but when it does come to shopping at the big guys, i love Publix, besides the farmers Markets and in a kitchen, The Pub as I call it puts a smile on my face. Plus They have Yuca the Cheapest to. Time for Pasteles yayyyyyyyyyyyyyyyy.
So this whole week I’ve been off relaxing and just going out to eat and supporting small business restaurants. Today I ate at Sushi Yoshi, me and my daughter Isis. Very dope place, and great food. Sorry I did not take any pics of the food I was hungry and just engulf my stir fry.
Had some really dope food at Hands Brewing. Smoke wings by Chef Joey was awesome. Sir those wings were beautiful executed. Go check him out.

I want to thank everybody that came out to the Pinehurst Farmers Market to support me and the other awesome Vendors, I sold out of all my pastries 🥮 In the first hour. I’m so thankful for all the support. And also thankful for my Sou-chef, Chef Hector JR. Not only is he my Sou-chef, also Chief Marketing Officer and helper, can’t have a better son and I love what I do, it has been a long road, but I will have my brick and Mortar soon and I will put out beautiful executed food 🥘 and I will be able to tell my story and my ancestors from food.

Made 4 dozen orders of Yuca Pasteles man some work. Notting store bought or frozen. Grating the yuca by hand to make the mass and using local Berkshire pork for my filling hard work I tell you. My ancestors were talking to me .
So also what I will be selling in a limited amount are my signature Pastries that I make.

Out smoking the meats. Lechon for the Cubans. Mojo Marinated Berkshire Pork Shoulders, smoked for 14 hours over Apple wood chips . Boy making 30 pounds of Brioche, grinding , making crazy amount of Espresso Chocolate Chip Cookies, grinding 20 pounds of Beef Brisket, and Smoking Pork Shoulders. Had a very successful day at the farmer market today. Back home prepping for my event tomorrow at the Museum. How many chefs you know making Brioche Buns, brown butter Brioche cinnamon rolls, Espresso Brown Butter Chocolate Chip cookies, and grinding my own CAB meat, and smoking about 29 pounds of Lechon.
