It's never a bad day to have a good cookie, and this one is unlike anything you've had before...

Gochujang, a Korean chili paste, might seem like an unusual ingredient for a cookie, but it gets blended with butter and brown sugar, and then swirled through a soft, chewy, sugar cookie dough, which both mellows the gochujang's spiciness and adds a rich, complex sort of caramelly flavor to the whole cookie.

This cookie is delicious on its own, but I strongly recommend using it to make an ice cream sandwich with your favorite vanilla ice cream. That's how I'll be eating them -- the contrast of textures and the mellow heat mixed with the coolness of the ice cream is the reward I need for turning the oven on in this crazy heat.
