We are excited about this summer’s honey harvest. We harvested little over 28 gallons and it is delicious!

There are different types of honey on the market and we have clover. The bees collect nectar from the flowers and it gives the honey a sweet, mildly floral taste, and unlike any sweetener or sugar.

Honey is great for baking and has a long shelf life. Honey helps keep your baked goods moist, because it absorbs moisture from the air. Frequently, asked questions are is it still good after it crystallizes. The answer is yes and you can gently heat to restore it consistency.

It’s good to know where your honey is coming from. Some stores are importing and it may have corn syrup which means you are not getting the full benefits of pure honey, paying a higher price, and you will notice a taste difference.

Different types of honey will have different flavors. We have clover honey and it has a sweet, mildly floral taste, and unlike any sweetener or sugar.

Honey is great to use when baking because it's hygroscopic (water-attracting): it absorbs moisture from the air, keeping your baked goods moist.

Honey has a relatively long shelf stability. If your honey has crystallized, gently heat it in a pan of simmering water uncap the jar until restored to its consistency.

Also, know where your honey is coming from. Some stores are importing and it may be filtered and you are not getting the full benefits of the honey and you will notice a taste difference.
