This weekend at the Farmers Market, besides my European baked goods and Thai Caramel Coffee Toffee Cake, I will also have a special new item: Thai Pineapple Pinwheel Pies 🍍
I make the pineapple filling from scratch, and I also make the pie dough myself. Every pie is cut, folded, and shaped by hand, one at a time. The pie is thin, light, and flaky, with a lightly sweet pineapple filling. It is not too sweet, so you can enjoy the fresh pineapple flavor.
I put a lot of love and care into making these pies, and I hope you will enjoy them 😊❀.

Let me share with you why I bring European and Asian-inspired pastries and desserts to the Farmers Market. ❀️😊

I come from an Asian country and I also had the opportunity to live in Europe for a while. I grew up enjoying both Asian and European pastries and desserts. In Asia, we have a wide variety of baked goods and desserts. I also fell in love with the beautiful food culture in Europe and their bakedgoods & elegant little gourmet treats such as German pretzels, brotchen, petite entremet cakes, croissants, tarts, elclaires, and many others.

My love for cooking started long before I became a baker. My father was a wonderful cook and some of my favorite childhood memories are watching him cook and helping him make food from scratch. From a young age, I learned that good food is made with care, patience, and love.

As I got older, I continued cooking and baking for my loved ones and friends. There is something special about bringing people together through food and seeing them enjoy something I made from scratch. Their encouragement and support gave me the confidence to keep learning, improving, and exploring new recipes and techniques. What started as a hobby soon became a passion.πŸ˜€

I am a self-taught cook and baker who has been cooking and baking for more than 15 years. Over the years, I have spent countless hours experimenting in my own kitchen, learning through trial and error, working in restaurants to gain hands-on experience, running a small home- based food business overseas, and taking master pastry classes online to improve my skills.

While I once dreamed of attending culinary school, I have learned so much through years of practice and real-world experience. Every recipe, every mistake, and every success has helped shape me into the cook and baker I am today.

One of the things I love most about the Farmers Market and other events is sharing something unique with the community. I know some of my products may be unfamiliar at first, but I always enjoy explaining them, offering samples, and introducing people to new flavors and experiences.

I love creating something memorable, connecting with people, and sharing the cultures, experiences, and memories that have shaped my life. Nothing makes me happier than seeing customers discover a new favorite treat, come back for more, and share it with their friends and family. Seeing first-time customers become regular customers is one of the most rewarding parts of this journey!😊

Today I experimented with making authentic German pretzels using a lye bath for only the second time.

For years, I made pretzels using the baking soda method. They were good, but when I lived in Germany, I fell in love with traditional German Brezeln and always wanted to recreate that same flavor and texture. A German friend had recommended using lye, but it was difficult to find where I was living at the time. Now that I'm back and can easily get food-grade lye, I decided to give it a try.

Since this was still a new technique for me, I tested different baking temperatures, comparing 400Β°F and 425Β°F to see how they affected the color and texture. The results were fascinating. The higher temperature produced a darker chestnut-brown crust, while the lower temperature gave a lighter finish. What surprised me most was the texture. The pretzels came out soft and fluffy on the inside, while the outside developed that characteristic chewy, slightly flaky crust that I remember from bakeries in Germany. It was a completely different experience from the baking soda version.

There's still more to learn and refine, but every batch teaches me something new. That's one of the things I love most about baking, it's a mix of science, tradition, and curiosity.πŸ˜€

πŸ₯¨ A Note About My Pretzels

My pretzels are baked the day before to ensure they are ready for the event. Because of this, they may lose some of their freshness and texture by the time you purchase them. I do not recommend eating them straight from the package while they are cold. For the best experience, I recommend to warm your pretzel before enjoying it. You can either

β€’ Microwave for about 20–30 seconds, or
β€’ Warm in a 350Β°F oven for a few minutes Reheating will soften the pretzel and bring back much of its fresh-baked texture, giving you a warm, soft, and delicious pretzel to enjoy.

I want every customer to have the best possible experience with my pretzels, so I highly recommend taking a few moments to warm them up before eating. Enjoy! πŸ₯¨β€οΈ
