Every loaf is a lesson. Timing, patience, ratios, fermentation, and ingredients all play significant roles in how our loaves come out. Iāve been experimenting with 100% whole grains, some fresh milled, and itās a whole other ball park when it comes to sourdough. Especially for me; I donāt follow recipes and I write/develop them so Iām literally pulling cards out of a hat putting things together. I was nervous about over proving this loaf and it ended up being under. Back to the drawing board! The flavor is amazing thoughā¦deeply earthy and nutty, and pleasantly sour. Texture is amazing too! The higher protein and whole grain give it an amazing chew!
Hereās your reminder to give yourself grace when baking. Perfectly fermented loaves donāt always happen, and thatās okay. Real homemade bread is still great, and the fact youāre taking the time to try is whatās important š
