The dough gets a long rest in the fridge before it goes in the oven. It’s one of the little things that helps my jumbo cookies bake up thick—and gives the flavor time to develop. 🍪 Do you put your dough in the fridge before baking???

Once you get used to a thick, gooey, 5 oz cookie loaded with all the good stuff… a regular cookie just feels a little sad.

The pretty display is only the final step 😂

Before these cookies ever make it to the market, there’s mixing, weighing, stuffing, chilling, baking, cooling, packaging, labeling… and usually me wondering why I decided every cookie needed to be 5 oz. 😂

But seeing that case full at the end gets me every time. 🍪

Baking the cookies? That part I can plan.

Figuring out exactly how many people are going to want? That’s another story 😂

Before every market I look at past sales, the size of the market, weather, and which flavors tend to sell the fastest.

Then I make my best guess and hope I didn’t make 30 too many… or 30 too few. 😅

The longer I do markets, the better I’ve gotten at estimating — but there’s definitely no perfect formula.

Fellow market vendors… tell me I’m not the only one 😂🍪
