A little over a week ago, we kicked off Birthday Month in our house. 4 of the 5 of us have birthdays within 4 weeks of each other, so we go through A LOT of cake and candles during that time! With all 3 kids in school now, I had the time to try something on my baking bucket list: Swedish princesstårta.
Light chiffon cake layers were brushed with a sweet milk soak, then layered with raspberry jam and Diplomat cream before being topped with a sweetened mascarpone cream that was almost tiramisu-like. I then wrapped the whole cake in tinted store-bought marzipan and made my best attempt at a marzipan rose.
In hindsight, I wish I hadn’t used store-bought marzipan, as it had an extremely bitter flavor that ruined everything it touched. It was also very tricky to roll out and smooth over the cake as you can see—lots of rips and holes 🙈
This was fun to bake and fun to eat (once the marzipan was scraped off)—happy birthday month to us!
