One lone Cranberry Orange bread 😋 I’m always testing recipes, and this one goes out to my mom. We love the boxed Cranberry breads (shout out to freeze dried fruit) but homemade with fresh cranberries never quite lived up to it. Cue cranberry purée! I’ve swirled a nice portion of purée in between layers of the batter to amp up the cranberry flavor, while keeping the added moisture at a safe level. The holiday is right around the corner can you feel it!!? 🍊🌲

*cue the dramatics* I really wanted to pipe something both trendy & traditional onto our cutting cake last year, but realistically I wasn’t skilled enough to execute it. This year I tried again. ‘Til death do us part, baby.



Always improving! My seams and piping can use more practice, but hey, getting there! Cake is half mocha (chocolate with espresso buttercream) and half vanilla with caramel and toffee bits 😋

They seem sooo much more dull than they really are: granola bars. These bars are made of old-fashioned oats, pecans, walnuts, almonds, cinnamon, honey, salt, and my vanilla bean paste. The oats are toasted in vegetable oil to help bring out more of the oat flavor, and then baked a second time with the remaining ingredients, creating a satisfying, crunchy bar! Don’t knock it until you’ve tried it 😉

I keep it real…and I sometimes keep it Vanilla…Vanilla Bean, that is. ••• Hear me out: vanilla can be a wonderful flavor if it’s strong enough. That’s where real vanilla beans come into play. I make my own vanilla bean paste, which consists of blending the whole vanilla bean pod with additional ingredients until thick and paste-like. This imparts much more vanilla flavor than an extract alone.

Wow. Yesterday was a whirlwind! First market ✔️ It was so, so wonderful to talk to customers and share my passion for baking. I got to talk about my homemade vanilla bean paste (used in VB macarons & crunchy granola bars), the use of freshly brewed espresso in my espresso macarons, the tart addition of cranberry puree to the cranberry buttercream, and more. Thank you to everyone who came out to support me! Most importantly, thank you to my husband, dear friend Abigail, and many other friends and family who’ve supported me and taste tested countless recipes right by my side….. Helloooooo, Facebook! And welcome to Mod Bake Shop, a new home bakery out of Cedar Rapids, Iowa. At Mod, I believe the most important things are flavor, followed by texture. I’ve tested countless recipes, saving any with promise for a later revisit (to improve upon them before selling to you). Recipe testing is imperative to cultivate a unique, but more importantly: flavorful and satisfying spread for my customers. I don’t do sub-par, and I personally believe in and like every item on my menu! While we may share different taste in dessert, I’ve done my best to test for sweetness levels, manage the richness in my products, and ensure flavor comes through. When you buy from Mod Bake Shop, you’re getting homemade, hand-crafted baked goods, with ingredients you recognize. I bake from scratch, so you don’t have to!
