Of course I had to make him a cake for his birthday! I made him a lemon cake using freshly milled soft white wheat, filled it with homemade lemon curd, and finished it with cream cheese frosting. 🍋

I’m still learning and experimenting with freshly milled flour in cakes, but I was really happy with how this one turned out! The lemon curd in the middle was definitely my favorite part. 😋

I think sourdough cinnamon rolls have a reputation for being hard to make... but honestly, they're so much easier than most people think.

The biggest ingredient isn't skill—it's just time. 😊

These were made with freshly milled whole wheat flour and given a long fermentation, which helps make the nutrients in the grain more available and gives your body more time to break everything down before you even take the first bite. That's one of the things I love most about sourdough. It isn't just delicious—it works with the way God designed food.

Freshly milled flour still contains the bran, germ, and natural oils that are removed from store-bought white flour, so you're getting all the goodness of the whole grain in every bite.

Soft, fluffy, full of cinnamon, and topped with homemade cream cheese frosting... these disappeared pretty quickly around here. ❤️

I've had a few people ask me what makes this cinnamon raisin bread different, so I thought I'd share.

This loaf is made with 50% freshly milled hard red spring wheat and 50% freshly milled spelt. If you've never heard of spelt before, it's actually an ancient grain that's been grown for thousands of years. It has this rich, slightly sweet, nutty flavor that pairs so well with cinnamon and raisins.

One thing I always like to tell people is that this isn't going to eat like store-bought cinnamon bread—and that's intentional. It's a little denser, a little chewier, and a whole lot heartier. It's the kind of bread that actually fills you up.

Personally, I think it's best toasted with a generous layer of butter while it's still warm. (My kids would happily eat the whole loaf if I'd let them. 😂)
I love baking with freshly milled grains because each one brings its own flavor and character, and spelt is definitely one of my favorites. Every loaf is made from grain I mill fresh right before baking, so nothing sits on a shelf for months before it reaches your kitchen.

Some days just call for warm chocolate chip scones. 🤍

I made these today with freshly milled organic soft white wheat, and they turned out so soft and tender. I know whole wheat gets a reputation for being heavy, but freshly milled flour is a completely different experience.

As a mom, I love finding little ways to feed my family foods that are both delicious and nourishing. It doesn't have to be complicated—sometimes it's just swapping out store-bought flour for fresh-milled grain and baking something everyone gets excited about.

These disappeared almost as fast as they came out of the oven... which I'd say is a pretty good sign. 😊

Instead, somewhere along the way, it became dinner. 😂

I made a sourdough focaccia with 100% organic, freshly milled hard white wheat and topped it with tomatoes, basil, and thyme that we picked from the garden this morning. A little flaky sea salt on top, and it honestly didn't need much else.

So we kept the rest of the meal simple—grilled chicken and a fresh salad made entirely from vegetables we picked out of the garden.

There's something really satisfying about building a meal around a loaf of homemade bread instead of treating it like an afterthought. Fresh ingredients, simple flavors, and food made from scratch just has a way of slowing everyone down for a little while.

Days like this make all the time spent tending the garden and baking sourdough feel completely worth it. 🌿🍅🍞

What's so special about freshly milled flour and sourdough? 🌾🍞

I get asked this a lot, so I thought I'd share a little bit about why I'm so passionate about baking this way.
When I bake, I start by milling organic wheat berries into flour right in my kitchen. Freshly milled flour still contains the entire grain—the bran, germ, and endosperm—which gives the bread incredible flavor and all the natural goodness the grain has to offer.

Then I let the dough ferment slowly with my sourdough starter. That slow fermentation is what gives sourdough its delicious flavor, and it also helps make some of the nutrients in the grain more available while breaking down some of the gluten proteins.

Could I make bread faster? Absolutely.
But I believe some things are worth slowing down for.

Every loaf I bake is made with: 🤍 Organic wheat berries 🌾 Freshly milled flour 🍞 Natural sourdough starter 🧈 Simple, wholesome ingredients ⏳ Plenty of time and care

There's something so satisfying about taking a simple grain and turning it into nourishing bread for another family. I'm thankful I get to share that with this community.

There's something special about watching simple ingredients become something that will nourish a family.

Hi! I'm Taylor, the baker behind my little kitchen. I bake small batches of sourdough sandwich bread using freshly milled, certified organic wheat. Every loaf starts with whole wheat berries that I mill fresh before mixing the dough, helping preserve the natural flavor and nutrients that are lost in conventional white flour.

This loaf is made with a 50/50 blend of organic hard white wheat and hard red wheat, naturally leavened with sourdough, and patiently fermented to develop both flavor and texture. From milling the grain to mixing, folding, shaping, proofing, and finally baking, each loaf is made by hand right here in my home kitchen.

I thought it would be fun to share a little behind-the-scenes look at the process so you can see the care that goes into every loaf.
