There’s something special about this loaf 🤍
Just a simple mix — freshly milled 50/50 hard white & hard red wheat, water, salt, and starter. No shortcuts, no extras… just time, patience, and a whole lot of trying again.
This is one of the best rises I’ve had since switching to fresh-milled flour, and it didn’t come easy. There were flat loaves, over-proofed dough, and plenty of moments I wanted to give up.
But isn’t that how growth works?
We don’t always see what’s happening beneath the surface. Just like sourdough, the transformation is slow, steady, and often unseen. But with patience and perseverance, something beautiful rises.
It reminds me that God is always working — even when I can’t see it yet. And that faith, like this dough, takes time to develop.

This loaf feels like a little reminder to keep going.
