Can sourdough be baked the same day?

The short answer is yes, but you might miss out on some key benefits.

Sourdough really thrives on time, ideally 12-24 hours of fermentation. This longer process offers several advantages:

During this time:
* gluten is partially broken down, which may improve digestibility
* phytic acid is reduced, helping your body absorb minerals
* beneficial acids develop, lowering pH
* minerals like iron, zinc, and magnesium become more available

- Baking same-day sourdough means less fermentation, which in turn means fewer of these benefits.
- The slow fermentation is precisely what makes sourdough so unique and beneficial.

I added a bit of whole wheat and rye to my usual flour.
The flavor got deeper, and the texture improved.
Sometimes small changes make a big difference.

• decorative cuts first
• main score last
• score just off the center line
• stay near center
• sharp blade
• one clean score → into the oven

Stop trusting the “double.”

Your starter doubled…
but your bread came out flat?

Doubling ≠ strength.

A young starter can make gas,
but it can’t hold a loaf.

Look for this instead:
• domed top at peak
• thick, not runny
• handles bigger feeds (1:2:2+)
• smells slightly sweet

That’s when it’s ready.
