Another birthday Sunday! This time our person of honor has chosen her favorite: devils food cake, frosted with vanilla buttercream and filled with cookies and cream! But she didn’t mind me making it fancy, so I did!

Birthday season is in full swing here at the Leddy’s. As the birthday person always gets to pick their birthday dessert, Meghan’s request was a cheesecake inspired by Samoa Girl Scout cookies! Creamy vanilla cheesecake with a shortbread crust (I felt that the chocolate crust would be too distracting), topped with toasted coconut and my homemade caramel, then drizzled with chocolate and more caramel!! It was SO good!!

Butterfinger Pie! Thanks to Dorothy for this gorgeous recipe, which turned out so well that I didn’t even have the chance to get a picture of it sliced! It went that fast!
Peanutbutter, cream cheese and whipped cream base, on a flaky crust with Butterfinger mixed in, and used as a topping…what could be better than that?

These treasures are a great alternative to standard wedding favors. Who needs another picture frame or candle cluttering their closet? Four different mini tarts carefully packaged and wrapped with ribbons the colors of the wedding couple, complete with a tag with their names and a “what’s inside” label telling the guest what a treat they’re in for - in this case Maple Pecan, Lemon Chess, Apple Crumb, and Pumpkin tarts. What a great way to continue the celebration!

Baking season is in full swing! (although, over here it’s always time to bake!)
Pies, cookies, cakes, certainly, but what’s a better anytime-snack than a scone? It’s perfect for breakfast, portable for lunches and coffee breaks, even good for dessert. Skip the donuts - bring scones to that meeting! Not too sweet, not too heavy, but full of flavor.

Just what a rainy afternoon calls for: fresh from the oven Peanut Butter and Jelly scones! Peanut butter scones layered with tart raspberry jam- perfect with a cup of tea ( or coffee!) on an otherwise soggy afternoon!

This should have been a Back to School post because, you know, peanut butter!! But here it is, a month into the school year, truly fall. These peanut butter scones were a work in progress for awhile now, trying to strike a balance between not-too-heavy and not dry, and I think I’ve finally nailed it! The flavor from the peanut butter really comes through in this cream scone, and it’s studded with both chocolate and peanut butter chips, then dipped in brown sugar for a crunchy sweet crust. Any time is a good time for this treat!

This is my favorite time of year. New school year, new clothes, new books, new supplies…and new baking ideas! These are Apple Butter Swirl mini cheesecakes, made with homemade rum vanilla apple butter for a sweet, spicy and bold swirl of autumn flavor!

Daffodil Cake, cupcake size!! This recipe from Martha Stewart was originally meant for a tube pan, but using the straight sided baking cups and making a tweak to the glaze ( because one can never have too much glaze!) I got 18 individual little Daffodil Cakes! Citrus chiffon on the bottom, angel food cake on top and lemon-orange glaze over it all, it’s a perfect single serving! Not too sweet, not too tart, and very light…just what you need on a hot summer afternoon ( and we have had plenty of those lately!)
